Irish Barm Brack Cupcakes!
Following tradition, a quarter and a ring are usually hidden in the cupcakes. Whoever finds the quarter will soon be wealthy and whoever finds the ring will soon be married! Neat huh?
Here’s what you’ll need:
1/2 cup of raising
1/2 cup of golden raisins
1/2 cup of dried cranberries
1 cup brewed black tea
4 cups all-purpose flour
1 tsp. allspice
1/3 cup packed brown sugar
1/3 cup sugar
1 tsp. baking powder
pinch of salt
1 egg
1 cup (2 sticks) of unsalted butter, melted
1 1/2 cups water
In a bowl, soak the raisins and cranberries in the tea and leave overnight.
Preheat the oven to 400 degrees farenheit. Grease a cupcake pan of 12.
Mix the dry ingredients in a large bowl. In a separate large bowl, mix the egg and butter. Drain the dried fruit and add water to the fruit. Add the fruit and water to the egg/butter mixture and stir well. Mix in the flour mixture.
Spoon the mixture into the cupcake pan. (At this point you can choose to place a ring and a quarter in two cupcakes.) Bake until the cupcakes are a dark golden color ~ for about 30-25 minutes. Remove the cupcakes and allow them to cool.

Add a little butter and a pint of Guinness and you’ve got the snack of champions!
