Irish Soda Bread

So tasty, I had it for dinner 🙂

 

Here’s what you need:

3 tablespoons unsalted butter, melted

4 cups of flour

3/4 cup sugar

3/4 cup golden raisins

2 tbsp. fennel seeds

1 tsp. baking soda

1 tsp. salt

1/2 tsp. baking powder

1 1/2 cups buttermilk

2 large eggs

Preheat the oven to 350 degrees farenheit.  In a bowl, combine the flour, sugar, raisins, fennel seeds, baking soda, salt, and baking powder. In a mixer, whisk the buttermilk, eggs, and 2 tablespoons of the butter. Stir the wet mixture into the dry ingredients to form a dough.

Knead the dough on a lightly floured surface for about 5 minutes. Form the dough into a 9-inch round and place it on a buttered baking sheet. Brush the loaf with the remaining tablespoon of butter. Using a sharp knife, make an X on top of the loaf.

Bake for about 35 to 40  minutes, or until golden brown. Cool completely before serving.

 

It’s wonderful with a little butter and some blackberry jam!
