3 1/2 tbsp butter
1/2 firmly packed brown sugar
2 large eggs
3/4 cup all-purpose flour
1/2 tsp baking soda
1/4 cup unsweetened cocoa
1/2 cup sour cream
4 1/2 oz semisweet chocolate chips
2 tbsp Meringue Powder
4 cups powdered sugar
- Put 18 cupcake liners in a cupcake pan.
- Put the butter, sugar, eggs, flour, baking soda, and cocoa in the mixer and beat together until smooth. Using a spoon, fold in the sour cream. Pour into the cupcake liners, about 3/4 full.
- Bake the cupcakes at 350 degrees Farenheit for 20 minutes, or until an inserted toothpick comes out clean. Let the cupcakes cool.
- To make the frosting, melt the chocolate chips in the microwave. Mix the melted chocolate and the Meringue Powder. Add the powdered sugar in increments until the desired thickness is achieved. Spread the frosting on the cupcakes.
